Vegan Taco Bowl

This vegan taco bowl is a healthy Mexican-inspired salad bowl that is loaded with flavorful ingredients and sure to satisfy. This is a high protein vegan taco bowl with lots of nutritional quality.

Not only is this taco bowl vegan, but this is also a gluten-free taco bowl. If you make a large batch, this would be great for a vegan taco bowl meal prep.

What is vegan taco meat made of?

This recipe uses lentils as a meat substitute, but you can also use walnuts, chickpeas, mushrooms, and more.

Are Mexican bowls healthy?

This one is for sure! Really, it depends on what you put in the bowl, but many taco ingredients are healthy.

This bowl’s main star is the lentils, which is rich in protein, folic acid, and dietary fiber. Lentils can help lower cholesterol and can help manage blood disorders.

What can you put in tacos instead of meat?

If you want a vegan or vegetarian taco you can use many plant-based meats. As I mentioned earlier, you can use lentils, walnuts, chickpeas, mushrooms, tofu, jackfruit, and black beans. Some people may also want to use vegetables such as butternut squash and cauliflower.

What are taco bowls made of?

This recipe calls for the vegan taco meat, and really whatever toppings you want. However, I used shredded lettuce, corn, black beans (I totally just used the recipe on the bag), fresh homemade guacamole, salsa, and vegan chipotle aioli.

If you can luck up and find some corn taco salad bowls, you should totally get them and use them as the base. I couldn’t find any at my local grocery stores, so I used a bowl.

How to make vegan taco meat

Ingredients for vegan taco meat

  • Olive oil
  • 4 garlic cloves
  • 3 green onions thinly sliced separate the green and white parts and use the green for this recipe
  • 1 can of diced fire roasted tomatoes
  • 1 cup lentils
  • 3 cups vegetable broth
  • Taco Seasoning
    • ½ tsp. Salt
    • ½ tsp. Pepper
    • 1 tsp. Ground coriander
    • 1 tsp. Cumin
    • ½ tsp. Ground ancho chili powder
    • 1 tbsp. Garlic powder
    • 1 tbsp. Onion powder
    • 1 tbsp. Oregano

Heat a large pan on medium heat with olive oil. Sauté the garlic and green onion until fragrant and translucent. Separate the green and white part of the onion and use only the green part of the onion for this recipe.

Add one can of diced fire roasted tomatoes and mix well. You do not have to drain the tomatoes.

Stir in your lentils that have been sorted and cleaned. You don’t have to soak the lentils because they will cook through later in this process.

Blend in the taco spice mix. Cook for 5-7 minutes to allow the lentil mixture to absorb the seasoning.

Stir in the vegetable broth and bring to a boil. Adjust salt and pepper if necessary. Once the lentils are at a boil, cover and let simmer until the lentils are cooked through.

In an individual bowl, or taco salad bowl, add your shredded lettuce as a base, then top with the vegan taco meat, black beans, corn, guacamole, salsa, and chipotle aioli.
