I first started making these meatballs a few years ago when I found the recipe in an old cookbook, but I have since put my own spin on it and maybe even made it a little simpler.

I also had to make the recipe gluten-free, which was simple by substituting the panko breadcrumbs for a gluten-free version.

How do you know when chicken meatballs are done?

Use a thermometer to check the internal temperature of the chicken meatballs. When the temperature reaches 165F degrees, then they are ready to go!

Why are my chicken meatballs tough?

Your ginger chicken meatballs are tough because either you haven’t added enough moisture, or because they are overcooked. It can also be a combination of both, which isn’t good.

How do you cook ginger chicken meatballs?

I cooked this batch of chicken meatballs on the stove, but you can also make these in the oven. You can serve these immediately or proceed with adding your favorite sauce or adding them to a soup.

What to serve with the ginger chicken meatballs?

These meatballs are great on their own on a toothpick, or you can serve them with other awesome appetizers for your next party. Ginger chicken meatballs with sesame sauce is also a great option, or chicken meatballs with teriyaki sauce. I’ve also seen a few recipes for ginger chicken meatballs with peanut sauce.

How to make these meatballs

In a large skillet, heat about 1 tablespoon of olive oil.

In a food processor, add the onion, garlic, and ginger. Pulse until the ingredients are diced. Add the onion mixture to the skillet and sauté for five minutes.

Finely dice the bell peppers, or also add them to a food processor.

Meanwhile, in a small bowl, add the breadcrumbs and the seasoning. Mix well.

In a large bowl, combine the ground chicken, sautéed onion mixture, gluten-free seasoned breadcrumbs, and egg whites. Mix well.

Make even-sized meatballs. I like to use a tablespoon or a small scoop, depending on what size meatballs I want.

In the same skillet from the onion mixture, heat more oil on medium heat. Add the meatballs and cook evenly on all sides until the internal temperature reaches 165 degrees.

Remove from heat.

Serve immediately as a meatball appetizer or proceed with adding to your favorite soup or sauce.

Enjoy!
