Ginger Chicken Meatballs

Gluten-free ginger chicken meatballs is a great gluten-free appetizer option for your next gathering. Simply use gluten-free breadcrumbs to make this appetizer safe to enjoy!

Ingredients
  

  • 1 lb. ground chicken
  • 1 yellow onion
  • 1 thumb of ginger
  • 5 garlic cloves
  • 1 red bell pepper
  • 1 yellow bell pepper
  • ¼ cup egg whites

Gluten-free seasoned breadcrumbs

  • ½ cup gluten-free breadcrumbs
  • 2 tsp. garlic powder
  • 2 tsp. onion powder
  • ½ tsp. salt
  • ½ tsp. white ground pepper
  • 1 tsp. herbs de provence

Instructions
 

  • In a large skillet, heat about 1 tablespoon of olive oil.
  • In a food processor, add the onion, garlic, and ginger. Pulse until the ingredients are diced. Add the onion mixture to the skillet and sauté for five minutes.
  • Finely dice the bell peppers, or also add them to a food processor.
  • Meanwhile, in a small bowl, add the breadcrumbs and the seasoning. Mix well.
  • In a large bowl, combine the ground chicken, sauteed onion mixture, gluten-free seasoned breadcrumbs, and egg whites. Mix well.
  • Make even-sized meatballs. I like to use a tablespoon or a small scoop, depending on what size meatballs I want.
  • In the same skillet from the onion mixture, heat more oil on medium heat. Add the meatballs and cook evenly on all sides until the internal temperature reaches 165 degrees.
  • Remove from heat.
