Vegan Chipotle Aioli – 2 Ways

Aioli is a mayonnaise-based dipping sauce, but if you’re vegan you’ll have to use a plant-based mayonnaise. Alternatively, you can use cashews as I do in this recipe. I’ve actually made it both ways, which I am going to share with you. Aioli can be as simple as mayonnaise, garlic, lemon or lime, salt, and olive oil. But, I like to spice it up! This is a super easy, creamy recipe for vegan chipotle aioli.

Chipotle chiles are jalapeños that have been smoked and dried. In this recipe, I’m using canned chipotle chiles in adobo sauce, an ingredient you can find in most grocery stores.

Adobo is a chile-based sauce made with dried chiles, spices, vinegar and sugar. In this recipe, I’m using both the chiles and some of the adobo sauce.

You can use this vegan chipotle aioli as a fry sauce, on a plant-based burger, such as a black bean burger, or a Chickpea Quinoa Burger. It’s also so yummy and versatile that you can use on an animal protein based burger, like the Chorizo Burger.

You can also sub out the plant-based mayonnaise for regular mayonnaise if you’re not following a vegan diet. That simple! Continuing reading for the recipe.

How to Make Vegan Chipotle Aioli?

The ingredients are very simple. All you need is:

  • 1/2 cup plant-based mayonnaise or 1/2 cup cashews soaked
  • 3 garlic cloves
  • 2 chipotle peppers in adobo sauce, feel free to add more for additional spiciness
  • Sea salt, to taste
  • Juice from one lime
  • 1 tsp. olive oil

You can also add cilantro to this recipe.

The instructions are also very simple, combine the ingredients in a food processor or blender and blend until you reach your desired consistency. Adjust the level of salt or spice, if necessary. If you are using cashews, don’t forget to soak them ahead of time. You can soak the cashews overnight, or they can be ready in as quick as 15 minutes, by boiling them. Drain them after soaking.

Vegan Chipotle Aioli

This is an easy, creamy recipe for a vegan chipotle aioli dipping sauce. Use this aioli on a sandwich or as a dipping sauce for French fries.

Ingredients
  

  • ½ cup plant-based mayonnaise or ½ cup cashews soaked
  • 3 garlic cloves
  • 2 chipotle peppers in adobo sauce (and about 1 tsp. of adobo sauce) feel free to add another chipotle pepper or adobo sauce for additional spiciness
  • Sea salt to taste
  • Juice from one lime
  • 1 tsp. olive oil
