What is in the white bean salad?

  • 2 cans of white beans, cannellini beans work great
  • 2 garlic cloves, grated
  • 1 red onion
  • 1 bunch of kale
  • Fresh parsley and mint
  • Cherry tomatoes
  • Lemon juice
  • Extra virgin olive oil

How to make the Mediterranean white bean salad

Drain and rinse the two cans of cannellini beans and set aside.

De-stem and clean the kale. In a large bowl, add the kale and a healthy portion of olive oil and massage. Once the kale has softened, set aside.

Grate the garlic cloves, roughly chop the onion, parsley, and mint, and cut the cherry tomatoes into quarters.
