Mediterranean White Bean Salad

- 2 cans of white beans cannellini beans work great
- 2 garlic cloves grated
- 1 red onion
- 1 bunch of kale
- Fresh parsley and mint
- 1 cup Cherry tomatoes quartered
- Juice from one lemon
- Extra virgin olive oil
Drain and rinse the two cans of cannellini beans and set aside.
De-stem and clean the kale. In a large bowl, add the kale and a healthy portion of olive oil and massage. Once the kale has softened, set aside.
Grate the garlic cloves, roughly chop the onion, parsley, and mint, and cut the cherry tomatoes into quarters.
In a large bowl, combine all the ingredients with the juice of one lemon and a bit of olive oil.
Season to taste with salt and pepper.
