Mediterranean White Bean Salad

This Mediterranean White Bean Salad is light and refreshing, perfect for the spring or any time.

Ingredients
  

  • 2 cans of white beans cannellini beans work great
  • 2 garlic cloves grated
  • 1 red onion
  • 1 bunch of kale
  • Fresh parsley and mint
  • 1 cup Cherry tomatoes quartered
  • Juice from one lemon
  • Extra virgin olive oil

Instructions
 

  • Drain and rinse the two cans of cannellini beans and set aside.
  • De-stem and clean the kale. In a large bowl, add the kale and a healthy portion of olive oil and massage. Once the kale has softened, set aside.
  • Grate the garlic cloves, roughly chop the onion, parsley, and mint, and cut the cherry tomatoes into quarters.
  • In a large bowl, combine all the ingredients with the juice of one lemon and a bit of olive oil.
  • Season to taste with salt and pepper.
