Garlic Confit
Garlic confit is a fantastic spread that can be used for toast or added to your favorite recipe and is highly customizable. This garlic confit is made in the oven, but you can always make it on the stovetop.
One day my husband came home and asked for garlic confit for his breakfast toast. Apparently, he had been watching Tiktok videos and knew that I could accomplish this small feat.
I did a little research and got to work. Here’s what I learned!
How do you make garlic confit?
There are at least two cooking methods, on the stovetop or in the oven. With either method you want to keep the oil’s temperature low, the max temperature I’ve seen is 300° F. However, I recommend using a lower temperature.
How long will garlic confit last?
If you store the garlic confit in an airtight plastic or glass container in the fridge, it can last up to 3 months.
What does confit mean?
Confit is a French word that means to preserve. A confit is a cooking technique traditionally used to preserve meats by cooking them in their own fat. You can also confit other foods by cooking it in grease, oil, or sugar water at a lower temperature.
What type of oil should you use?
I’ve seen slightly conflicting information about this. Some say that you should use higher-heat cooking oils such as a grapeseed oil or avocado. I’ve also seen recipes that call for olive oil, which has a lower smoke point.
What goes in garlic confit?
In its simplest form, garlic confit is oil simmering on low heat with garlic. You can get creative by adding in herbs, spices, and peppers.
Common herbs that I’ve seen used are thyme and rosemary. However, for a batch I made, I used basil and it was a great addition! How can you use the leftover garlic oil?
You can use the garlic oil for stir frying or as a dip for your favorite gluten-free bread. If you made the garlic confit in a different oil than olive oil, you can also store it in olive oil. This will infuse the olive oil with an amazing garlic flavor.
Ingredients
- 4-5 heads of garlic or as much as you want 😊
- Grapeseed oil enough to cover the garlic
Instructions
- Pre-heat the oven to 250° F.
- In an oven-safe baking dish, add the peeled garlic and enough oil to cover the garlic.
- Cover with foil.
- Bake for about 3 hours or until the garlic is brown and soft.
- Allow the oil and garlic to completely cool before storing. Store in an airtight glass or plastic container in the fridge for up to three months.
Use this garlic confit for an amazing toast that can be served along side any of these soups or salads.
