This roasted garlic mashed cauliflower recipe is simple and quick to make! All you need is a few ingredients and food processor or blender.

Is roasted garlic mashed cauliflower good for you?

Garlic and cauliflower are both great for you, although you get more nutrients in its raw state. Cauliflower is a great source of vitamins K and C, fiber, and potassium.

You can make this mashed cauliflower recipe vegan by substituting the cream cheese for a plant-based one. If you do so, I recommend adding a bit more salt to bring out the flavor.

How to make oven roasted garlic

Pre-heat the oven to 400°F. Peel most of the paper off the garlic. Trim the head of the garlic to expose the tops of the garlic cloves. Create a loose foil packet. Place the prepared garlic in the foil and top with sea salt and fresh rosemary. Lightly wrap the garlic bulb, leaving a little room for it to breathe. Bake for about 40 minutes.

Note: If you are making one bulb, you can use a piece of aluminum foil big enough for that one bulb. If you want to make more, use a muffin tin, and gently tent each bulb with foil.

  • 1 head of cauliflower
  • 2 bulbs of roasted rosemary garlic
  • ½ cup cream cheese, can substitute for plant-based cream cheese
  • Salt
  • Pepper

How to make Mashed Cauliflower

Make your oven roasted garlic.

Clean and trim the cauliflower into medium sized florets.

Fill a large pot with water and the cauliflower florets.

Bring to a boil and cook until the cauliflower is tender.

Strain the cauliflower but keep about 1 cup of the water.

To your food processor or blender, add the cauliflower, roasted rosemary garlic, cream cheese, salt, pepper, and 1 tablespoon of the leftover water.

Blend until you reach your desired consistency and flavor. You may want to add more salt, pepper, or water.

Serve immediately. Enjoy!
