Roasted Garlic Mashed Cauliflower

This roasted garlic mashed cauliflower is creamy, healthy, and addictively delicious.

Ingredients
  

  • 1 head cauliflower
  • 2 bulbs roasted rosemary garlic
  • ½ cup cream cheese
  • salt to taste
  • pepper to taste

Instructions
 

  • Make your oven roasted garlic.
  • Clean and trim the cauliflower into medium sized florets.
  • Fill a large pot with water and the cauliflower florets. Bring to a boil and cook until the cauliflower is tender.
  • Strain the cauliflower but keep about 1 cup of the water.
  • To your food processor or blender, add the cauliflower, roasted rosemary garlic, cream cheese, salt, pepper, and 1 tablespoon of the leftover water.
  • Blend until you reach your desired consistency and flavor. You may want to add more salt, pepper, or water.
