Roasted Garlic Mashed Cauliflower

- 1 head cauliflower
- 2 bulbs roasted rosemary garlic
- ½ cup cream cheese
- salt to taste
- pepper to taste
Make your oven roasted garlic.
Clean and trim the cauliflower into medium sized florets.
Fill a large pot with water and the cauliflower florets. Bring to a boil and cook until the cauliflower is tender.
Strain the cauliflower but keep about 1 cup of the water.
To your food processor or blender, add the cauliflower, roasted rosemary garlic, cream cheese, salt, pepper, and 1 tablespoon of the leftover water.
Blend until you reach your desired consistency and flavor. You may want to add more salt, pepper, or water.
