Vegetable Broth
A solid vegetable broth recipe can be consumed alone, or it can serve as the base for so many other recipes. It can be used for stir-fry, veggie burger, soups, gravy, sauces, risotto, and even basic things like steaming vegetables.
A good vegetable broth recipe can add layers of flavor to your dishes. Also, making your own vegetable broth could be a great way to use excess vegetables and scraps you may have in your fridge to not waste any food! So be sure to plan and save your vegetable scraps like broccoli stalks, onion ends, mushroom stems, celery ends, carrot tops, vegetable peels, among others.
Making a vegetable broth is very easy and you can customize the ingredients based on what you have on hand or want the broth to taste like. However, as a baseline, in my opinion, you should always have celery, carrots, onions, garlic, and herbs such as bay leaves and thyme. But please, feel free to get creative once you master this recipe and try out different combinations! After all, I love a good experiment.
What you need for every 2 liters of water
- 2 medium carrots
- 4 celery stalks
- 2 medium parsnips
- 1 yellow onion
- 5 garlic cloves
- 2 bay leaves
- A bundle of thyme and rosemary
- 1 tsp. whole black peppercorns
- Sea salt to taste
Prepare the ingredients.
Add the ingredients to a large pot. Bring to a boil, then allow to simmer for 45 minutes to an hour.
Strain the vegetable broth and enjoy!
