Banana Walnuts Muffins have always been my favorite muffin to eat, whether for lunch or for a snack. This recipe is my gluten-free version that is moist, light, and fluffy! Keep reading for a classic banana walnut muffin recipe.

How to make gluten-free banana walnut muffins light and fluffy?

To bake light and fluffy gluten-free muffins it is important to keep your wet and dry ingredients separate until it is time to blend them together. Also, you must make sure you have the right ratio of wet and dry ingredients.

While recipes call for exact measurements, you can usually tell if the muffins will be light and fluffy by the texture of the batter. You can always adjust midway through if necessary.

This easy gluten-free banana walnut muffin recipe calls for

  • 3 ripe bananas
  • 1 cup sugar
  • ½ cup melted butter
  • 1 ½ cup gluten-free flour
  • ½ cup almond flour
  • 1 egg
  • ½ tsp. baking soda
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 1 cup of chopped walnuts (optional)

However, you can adjust the recipe to make different flavors. For example, you can make chocolate banana muffins by adding cocoa powder and an additional egg to balance the dry and wet ingredients. Additionally, this recipe calls for walnuts, but you can use pecans or skip the nuts all together.

What other substitutions can I make?

Feel free to use turbinado sugar for this recipe rather than granulated sugar. The turbinado sugar adds more moisture to the muffin and it is super delicious!

  • Pre-heat your oven to 350oF.
  • Combine your dry ingredients (gluten-free flour, almond flour, baking soda and powder, and salt) in a bowl.
  • In a separate bowl, mash your bananas. Slowly incorporate your sugar, butter, and eggs.
  • Once you’ve mixed your wet ingredients, slowly add your dry ingredients.
  • Lastly, fold in the walnuts.
  • Add batter to lined muffin tins.
  • Bake in the oven at 350oF for 25-30 minutes. Check with a toothpick.
