Banana Walnut Muffins

- 3 ripe bananas
- 1 cup sugar
- ½ cup melted butter
- 1 ½ cup gluten-free flour
- ½ cup almond flour
- 1 egg
- ½ tsp. baking soda
- 1 tsp. baking powder
- ½ tsp. salt
- 1 cup chopped walnuts (optional)
Pre-heat your oven to 350F.
Combine your dry ingredients (gluten-free flour, almond flour, baking soda and powder, and salt) in a bowl.
In a separate bowl, mash your bananas. Slowly incorporate your sugar, butter, and eggs.
Once you’ve mixed your wet ingredients, slowly add your dry ingredients.
Lastly, fold in the walnuts.
Add batter to lined muffin tins.
Bake in the oven at 350F for 25-30 minutes. Check with a toothpick.
