Kale Salad with Tahini Dressing is a raw kale salad topped with a homemade creamy tahini dressing.

Ever since I had Woodland’s Vegan Bistro’s (now NuVegan Café) garlic kale salad, I’ve been trying to remake this garlic kale salad recipe. This isn’t an accurate restaurant remake, but it’s incredible.

While I was doing research for this post, I discovered that there is a NuVegan Café about 20 minutes from me! I immediately got up and went because I had to get my hands on their garlic kale salad. I’m still working on how they achieved their garlic sauce. So more to come on that soon!

NuVegan Café also has gluten-free chik’n drummies, which are amazing. The drummies are imitation chicken drumsticks that have great taste and texture. NuVegan has a myriad of sauces to choose from to pair with the drummies. I would love to do a restaurant review for NuVegan, but there aren’t many gluten-free options.

Kale and tahini are both nutritious foods, but together they make a healthy base for a harvest bowl (or buddha bowl), a side dish, or a hearty salad.

How to select the best kale

Look for kale that is fresh, tender, and with dark greens. Try to avoid kale that has dry or yellowing leaves, evidence of insect injury, or decay.

How to properly store kale

You should store kale in the refrigerator crisper wrapped in a damp paper towel or placed in a perforated plastic bag. I have these awesome produce containers that I use for my kale. In the container, I layer the kale with the paper towel to help absorb the moisture from the kale.

Do not wash your kale before storing. The additional moisture will cause the kale to become limp.

How do you make kale salad with tahini dressing?

It is very simple to make. All you need is fresh kale that has been de-stemmed and thoroughly washed and the tahini dressing.

In a large bowl, add your kale and however much tahini dressing you desire. Massage the dressing to the kale. I also added a bit more olive oil to ensure that the kale was nice and soft to easily digest. Take your time with this step!
